Broccoli With Lemon

A healthy side dish, filled with vitamins and fiber. A great accompaniment to Sunday Dinner

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 tsp. olive oil
  • 1 medium garlic clove, minced
  • 1/2 cup minced red onion
  • 1 lb. fresh broccoli florets
  • 1/2 cup low fat, low sodium chicken broth
  • 2 tsps. lemon juice
  • 1 tsp. grated lemon zest

Preparation:

Heat the oil in a large non-stick skillet over medium high heat. Add the garlic and onion and saute for 3 minutes. Add the broccoli and broth. Cover and steam for 6 minutes. Add the lemon juice and lemon zest and cook uncovered for 30 seconds.
